The history of white chocolate is an enigma, to be sure. When it chocolate became “white” is anyone’s guess - we found recipes for white chocolate going back to the mid-1800s, although their ingredients weren’t what you’d expect. Some referred to “white chocolate” as greying dark chocolate called “white” to promote sales (which it did!). Whitman’s Crystallized Fruits and Superfine Candies advertised “White Chocolate Nougat” in 1888. Recipes for white chocolate, including one from 1871, called for rice flour, arrowroot powder, gum Arabic and, yes, cacao butter. Then there’s that other issue. Is white chocolate actually “chocolate”? Some say “no.” White chocolate, they say, is not "true" chocolate because it does not contain cocoa solids which gives chocolate its classic color and flavor. Oh PLEASE! It does contain cocoa butter, also from the cacao tree! Am I right? Leave manufacturing quibbles to the manufacturers. It IS chocolate.
