Historical Insights

Caramel covered marshmallows were originally called “caramel biscuits,” which have been around since the late 1800s. This version was made in 1889 in Kentucky and called the “Modjeska.”  So why the name? In 1889, renowned Polish actress Madame Helena Modjeska thrilled Kentucky audiences with her performance in the debut of Ibsen’s play, “The Doll’s House.” So impressed was a confectioner in the audience, he named his caramel biscuit the “Modjeska” in her honor. These are the caramels he made.

Modjeska – The Sweet History of a Legendary Confection

Caramels are an American invention that emerged from the European caramelized sugar of the seventeenth century and is the essence of the praline which the French brought to Louisiana in the 1760s. The caramel came into its own in the late 1800s, around the time when Hershey started the Lancaster Caramel Company. The Encyclopedia of Food and Beverages, published in 1901, gives this definition of caramel: “Sugar and corn syrup cooked to a proper consistence in open stirring kettles, run out in thin sheets on marble slab tables and cut into squares when cooled.” That recipe is not an industry standard: Hershey, compliments of his Denver caramel-making employer, knew to substitute paraffin wax for milk. Either way, caramel played a welcome part in candy where, with nuts, chocolate coating, or simply solo, they are one of America’s favorite candies today.
