McCraw's Flat Taffy is indeed unique. It's flat, but unlike similar taffy such as Turkish Taffy, it's also thin. Actually, paper thin, which makes it firmer than its saltwater cousins, so you can bite off just the right amount. The flavor is much like sherbert; sweet, of course, but understated in an appealing way. The flavors vary from the original vanilla to cotton candy. You'll get a variety with each order.
So, why is McCraw's Old Fashioned Flat Taffy so thin? The story goes that in 1908, when the McCraw sisters were making the first batch in their Texas kitchen, they had a limited supply of sugar. So, they used what they had. True? Not true? I vote for who knows. Stories trickle down and become romanticized over the ages. Besides, iterations of pulled sugar were common around 1908 as before, and the standard taffy size was not set. But one thing is certain: the flatness of the flat taffy is perfect in hot weather. Just freeze the taffy, break it into cold little pieces, and enjoy.
