Pate de Fuit and its American counterpart, Fruit Jellies, are fruity tasting candies, with a soft center and delicate sugar coating. They are cut, rather than molded, in easy-to-eat pieces. Their color, and size, make for after dinner treat, a plus alongside ice cream or cakes, and a general delight whether straight from the box or hugged by a candy bowl. A true old-time candy, Pate de Fruit was a favorite among well-to-do Colonists in the 1700s Other versions include today’s Fruit Slices.

Pâte de fruit began as a way to preserve the harvest. By cooking fruit and sugar into a firm, jewel-like confection, French candy makers created a sweet that captured the flavor of ripe fruit long after the growing season had ended. Other options included the ancient glace fruit, honey coated nuts, and, of course, dried fruit. Fruit Jellies, an American version, is frequently made with fruit flavoring, bringing us such old-time favorites as Fruit Slices.

Pâte de fruit emerged from an age-old challenge: preserving fruit long before refrigeration. People used many methods - including drying fruit, candying fruit (think today’s fruitcake), and
coating nuts with honey or sugar, a practice that gave rise to candies such as Jordan almonds.
During the Middle Ages, French confectioners refined another solution by slowly cooking fruit purée with sugar until it formed a dense, shelf-stable confection. The result was pâte de fruit, one of France's classic fruit candies.
Its American cousins, fruit jellies or cut jellies, developed later. While traditional pâte de fruit is made with fruit purée, many modern fruit jellies rely on fruit juice, flavorings, or a
combination of both.
Despite these differences, they remain close relatives in the long history of fruit-based confections.
