Historical Insights

From Susan’s Book “Sweet as Sin”

Caramels are an American invention that emerged from the European caramelized sugar of the seventeenth century and is the essence of the praline which the French brought to Louisiana in the 1760s. The caramel came into its own in the late 1800s, around the time when Hershey started the Lancaster Caramel Company.  The Encyclopedia of Food and Beverages, published in 1901, gives this definition of caramel: “Sugar and corn syrup cooked to a proper consistency in open stirring kettles, run out in thin sheets on marble slab tables and cut into squares when cooled.”  That recipe is not an industry standard: Hershey substituted paraffin wax for milk, a trick he learned when working at a caramel-making company in Denver. Regardless of who invented what, caramel played a welcome part in candy where, with nuts, chocolate coating, or simply solo, they became one of America’s favorite candies today.

Chocolate Through the Ages: A Tale of Flavor and Innovation

Chocolate began in Mesoamerica with cacao beans, which were cherished for their health benefits. When cacao arrived in Europe in the 1600s, it faced skepticism but eventually became a popular drink. By the 1700s, John Hannon and James Baker started a chocolate mill, producing the first chocolate for colonists. Chocolate became a favorite of influential figures like Benjamin Franklin and Thomas Jefferson, who saw its health benefits. Early chocolate was bitter, often prepared by boiling and dissolving chocolate cakes, with sugar, spices, or wine added for flavor. Innovations in the 1800s brought chocolate bars, French-style creams, and smoother textures thanks to Adolphe Lindt’s conching machine. By the 1900s, U.S. chocolatiers like Schrafft’s made French-inspired chocolates widely popular. Want to discover more about how chocolate evolved over the years and the treats that were born from its history?
