Caramel's ascension into the world of candy came as candy overall was coming into its own. The Civil War was over, machinery was chugged along, and transportation was improving at a rapid pace bringing fresh milk, sugars, and other products to the home and confectionery where candy was made. Just as important, wrappers of various types were available from interesting boxes to wax wraps. Previously, candy had to be measured and weighed then poured into a bag before reaching the customer. Caramels were only a little different. They were sold by the piece, something called ācount candy,ā kept within a candy counter out of the customersā reach. Another innovation changed the candy world, making it possible for the customer to do the counting and even weighing themselves. These were called penny candy stores, and customers ā mainly kids ā weighed and counted the selections themselves, and were thrilled to do so. Caramel, even then, was a favorite.
