Inspired by the flavors of Neapolitan ice cream, the Neapolitan Coconut Bar dates to about 1894. By the late 1800s, shredded coconut had become widely available, allowing confectioners to make coconut candy in layers of strawberry, vanilla, and chocolate. Before chocolate-covered candy bars became common, these coconut bars were sold as a sugar confection made by pressing cooked coconut into bars or slices. The Neapolitan Coconut Bar remains one of the enduring examples of late nineteenth-century American coconut candy.
