First of all, Satellite Wafers are about texture. The outer shell, made of thin, edible rice paper, dissolves in your mouth instantly. Even better, it leaves a sea of tiny sugar beads that are so crunchy in comparison, they are delightfully distracting. Then there’s the flavor: the shell has a mild flavor, as one would expect from such a delicate covering. Inside, the beads are more spirited – not exceptionally so, but still compelling. Perhaps the best part of these candies is they look like satellite aka flying saucers. Shake them and the tiny beads roll around like happy extraterrestrials.
