The French nougat has a soft, marshmallow-ish texture, and an almond-touched flavor. The bar is light, sweet but not cloying, and satisfying without being filling. Nougats of this sort are esteemed in the U.S. as well as elsewhere around the world. In fact, the honey-based nougat dates back to the Roman food writer Apicius in the first century CE. Even the almonds, which seem to float in the bar, are significant for the role of almonds at weddings and in symbolic foods. One tenth century text described the combination as being as soft and sweet as lips. You'll understand after the first bite.
