A chocolate mousse truffle is pure indulgence, combining the richness of chocolate with an airy, melt-in-your-mouth texture. As it is technically an “American Truffle” it is half-oval-shaped and coated first in dark chocolate then milk chocolate and filled with a lightly whipped milk chocolate mousse. The texture – a contrast between crisp outer shell and meltingly smooth interior– is one of its best attributes, perfectly matched by the flavor. Typical of American truffles, the size is close to a small dessert - enough to enjoy without feeling drowsy.  Most compelling is the aura of truffles. They have long been seen as the most romantic, sensual, and high-end confection, the perfect gift for a friend, lover and yes, even your grandmother!

Historical Insights

The origin of truffle candy is a mystery. Many believe the
truffle originated as a happy accident in the kitchen of a French chef in the 1920s. Others believe the truffle was created by monks…and why not? They were the ones who invented champagne.

Still others claim the first truffle recipe wasn’t recorded until the 1920s in the United States. Here’s what they say: Chocolate
Truffles were invented by accident in the kitchen of illustrious French chef, Georges Auguste Escoffier, in the 1920s. It seemed that one of his apprentices was attempting to make pastry cream. He accidentally poured hot cream into a bowl of chopped chocolate instead of sugar and eggs.

As you can just imagine, Escoffier was outraged. You "ganache” he yelled, which apparently means “fool…”  although
etymology dictionaries say it means “jaw.” Whatever. It seems the creamy mixture hardened and the ever-resourceful Escoffier rolled it into a walnut-sized ball which he then rolled in cocoa powder and voila' – it looked like a truffle. In this case, the truffle it resembled was the mushroom truffle. No one seemed to
mind…or even question …the relationship between the chocolate and a fungus. The resulting candy was esteemed and expensive.

True? Probably not. In researching the story of truffles, I discovered an advertisement for chocolate truffles in The Times Record of Brunswick Maine dated, 1891, among other places. Granted they were advertised in the “Parisian Style” but still, this was Maine and Escoffier hadn’t invented them yet.
