DESCRIPTION

Flavored with lime, including the peel and juice, this candy has a sweet-tart, aromatic flavor—citrusy with a pleasantly bitter edge from the peel. Originally from Persia, it represents an older style of today’s wrapped hard candy dating back to the 1700s— possibly earlier. At that time, when confectioners made sweets by cooking sugar into a concentrated syrup, adding flavor, and shaping the hot candy while it was still pliable. To give it this shape, the warm candy may have been snipped into small pieces with scissors. Like today’s hard candies, it is essentially flavored, cooked sugar that cools into a hard, brittle sweet.
