A chocolate mousse truffle is pure indulgence, combining the richness of chocolate with an airy, melt-in-your-mouth texture. As it is technically an “American Truffle” it is half-oval-shaped and coated first in dark chocolate then milk chocolate and filled with a lightly whipped milk chocolate mousse. The texture – a contrast between crisp outer shell and meltingly smooth interior– is one of its best attributes, perfectly matched by the flavor. Typical of American truffles, the size is close to a small dessert - enough to enjoy without feeling drowsy.  Most compelling is the aura of truffles. They have long been seen as the most romantic, sensual, and high-end confection, the perfect gift for a friend, lover and yes, even your grandmother!

INGREDIENTS:  Dark Chocolate (Sugar, Chocolate liquor processed with alkali, Cocoa butter, Milk fat, Soy lecithin -an emulsifier, Natural flavors), Milk Chocolate (Sugar, Milk, Cocoa butter, Chocolate liquor, Soy lecithin - an emulsifier, and Vanilla), Sugar, Heavy Cream (Cream, Carrageenan, mono and Diglycerides, Cellulose Gum, Polysorbate 80 standardized with Dextrose. Historical Insights

The origin of chocolate truffles is a mystery. The truth? Who knows? My guess is that probably all the theories about the origin of the chocolate truffle are...correct.

One theory, in particular, tells us that the famous French baker Louis Dufour ran out of ideas for Christmas treats. In a moment of inspiration, he made a batch of round ganache that he dipped into melted chocolate and rolled them in cacao powder.

Next thing you know Louis Dufour immigrated to England and took the truffle recipe with him. And somehow, the illustrious truffle ended up in America where it was discovered…except, Americans were already making them. In fact, in 1906, the Hartford Courant advertised truffles that were “exceptionally good.”
