Maple candy is unique among other sugar candies for numerous reasons. For one, maple sugar production doesn’t have the bandwidth of other sugar-based candies. Its production is limited to the demands of the maple tree, from its environment to the rigors of harvesting and boiling the sap.
The nature of maple sugar production was typically communal. The Native North American Chippawa, for example, collected maple sap during the peak season,
usually between mid-March and Mid-April, what they called “ck igami ' sigcgi 'zls” or “boiling month.” During this time, a community of families moved to a site rich with maple trees. There they slashed the tree with a tomahawk, poured the collected sap in a hollowed-out log or other vessel, and dropped in hot stones to more or less boil the sap into a sticky syrup. Once the water evaporated, they stored or poured the syrup on ice or
snow, which was eaten as candy.
The Chippawa also let the maple sugar run into small tin pans to form sugar cakes, and, poured “…thick sirup … into little birch-bark cones, dishes, or other receptacles, including the upper mandible of ducks' bills, which formed a favorite confection for children...[Maple sugar] was also eaten as a confection, and
dissolved in cold water as a summer drink. It was frequently mixed with medicine to make it palatable, especially for children."
