Sponge aka Sponge Candy aka Molasses Puffs is a hard-to-find, highly textured, late 19 th century treat. Outside is a chocolate shell made in small batches at an old-time confectionery. The taste is richly chocolate, never waxy or watered down whether smooth and sweet milk chocolate or bold dark. Inside is a crisp sugar crunch, crunchy as a Chocolate Straw but don’t be alarmed. It’s also melts in your mouth for one of the most textured candy experiences your likely to enjoy! As for the flavor: it tastes sweet, with a subtle flavor of burnt sugar. Pick from dark or milk. Discover the Rich History Behind Chocolate-Covered Sponge Candy
As so much in history, no one knows the origin of Sponge candy. Most experts believe that sponge candy started in Canada or the northern most parts of the U.S., which makes sense, as sponge candy gets sticky in heat. They also tell us that sponge candy originated in the 1920s. which doesn’t make sense as True Treats discovered that iterations were stateside since the late 1800s. True, the ingredients varied, some called for egg whites, for example. And the flavors – seems a real favorite was Pepsin Sponge Candy which were described as “elegant.” The most common recipe of today showed up mid-20 th century, calling for sugar, corn syrup, vinegar and baking soda. This version – which is most definitely sponge candy! – was called Molasses Puffs.
