Rock candy was a uniquely pure sugar candy – sugar, sugar and more sugar…for what might very well be millennia. In the 19th century, rock candy became a penny candy classic, often colored with yes to give it more pizzaz. For confectioners, rock candy must have been deliciously easy: just add sugar to water and let the crystallization process do what comes naturally -- forming big lumps of sugar crystals. No mere sweets-lovers treat, rock candy has served many purposes and won much praise. In the early 1800s, for example, the Massachusetts Charitable Mechanics Association, a group co-founded by Paul Revere, showcased rock candy at a judged exhibition. In the late 1800s it was part of a popular drink Rock n’ Rye. For that reason, Prohibitionists nearly shut down all rock candy makers, leaving but a few to crystalize the sugar. Today, rock candy is back and ever-more enjoyable (and honorable) than in the past.
