As the plant has a high content of mucilage, it was sticky and difficult to work with, however, and its use in the kitchen was minimal. Then a guy named Peter Cooper, an inventor who developed the American steam locomotive, stumbled on something altogether new while trying to make glue: instant gelatin. This quick and easy ingredient would replace the marsh mallow plants, giving us the festive marshmallow of today.
