History of the Soft Pecan Pralines

The praline was brought to New Orleans by nuns in the 1700s. The pecan was a natural fit, as it is a native North American nut although originally not strong enough for production. An enslaved nurseryman, Antoine, created a hybrid pecan tree that was strong enough for the rigors of agribusiness in the mid-1800s. For centuries, the praline was sold by Creole women on the streets and at fairs in New Orleans. These pralines are especially soft and creamy with plenty of nuts…reminding us that the praline, made of caramelized sugar, was the parent to the caramel. Comes with two in a bag and a tag with a picture of a New Orleans praline-seller, circa 1880s.
